Traditional Georgian Chakhokhbili

Chakhokhbili is a traditional Georgian chicken stew prepared with tomatoes, onions, fresh herbs, and aromatic spices. Originally made with pheasant, this hearty dish is now commonly cooked with chicken and is loved for its rich, comforting flavor. Simple yet deeply satisfying, Chakhokhbili is a staple of Georgian home cooking.

Ingredients

  • Salt

  • Pepper

  • Butter – 50 g

  • Basil

  • Cilantro

  • Chicken – 2 kg

  • Tomatoes – 5 pcs

  • Tomato paste – 1 tbsp

  • Onions – 2

  • Egg – 1

  • Garlic – 3 cloves

Preparation

Cut the chicken into pieces. Melt a little butter in a deep pot and lightly brown the chicken. Add the chopped onions, cover with a lid, and let them simmer. Add the peeled, chopped tomatoes and the tomato paste dissolved in a little water. Bring to a boil and cook for about 20 minutes, until the chicken is done.

At the end, add the beaten egg and stir quickly to incorporate it evenly. Then add chopped pepper, garlic, herbs, and salt. The egg is optional, but it adds great flavor.
