Tkemali spread is one of the most popular spreads in Georgia. There are many recipes, and here’s a method for making fresh Tkemali spread. This recipe yields about 2.5 liters.

Ingredients

  • Bitter chili pepper

  • Salt

  • Garlic – 2 medium heads

  • Cherry tomatoes – 1 large bunch

  • Cilantro – 2 large flowering bunches

  • Dill – 3 bunches

  • Tkemali (plum) – 2 kg

Preparation

  1. Wash the Tkemali and place them in a pot. Add enough water to cover them and place over heat. Once the water boils and the Tkemali pulp separates from the skin, remove the pot from the heat and let it cool.

  2. Chop the herbs, separate the garlic, and grind it together with the chili peppers, or run it twice through a meat grinder. Adjust the amount of chili according to taste.

  3. Drain the Tkemali, saving the juice. Rub the fruit through a sieve and add the drained juice back to the mashed Tkemali.

  4. Mix the mashed Tkemali with the prepared herbs, garlic, chili, and salt.
