How to Make Traditional Georgian Kada: A Step-by-Step Guide

This recipe creates wonderfully crispy and delicious traditional Georgian Kada. It’s a perfect treat for tea time!

Ingredients

For the Dough:

  • Butter (cold): 250g

  • All-purpose flour: 800g

  • Matsoni (Georgian yogurt): 300ml

    • Note: If Matsoni is unavailable, you can substitute it with plain Greek yogurt or sour cream.

  • Baking soda: 1 tsp

  • Salt: 1/4 tsp

For the Filling (Kada stuffing):

  • Butter: 150g

  • Sugar: 400g

  • All-purpose flour: 400g

  • Vanilla extract/powder: 2 sachets (or 1 tsp)

  • Egg white: 1 (to brush the dough before adding the filling)

For the Egg Wash:

  • Egg yolk: 1

  • Sour cream: 1/2 tsp

  • Milk: 2 tbsp


Instructions

  1. Prepare the Dough: Combine the flour and cold butter (or margarine) in a bowl. Use your fingers or a pastry cutter to rub the butter into the flour until you have a crumbly texture. Dissolve the baking soda into the Matsoni, then add it to the flour-butter mixture. Knead until you get an elastic dough. Wrap it and refrigerate for about 2 hours.

  2. Prepare the Filling: In a dry pan, lightly toast the 400g of flour until fragrant and slightly golden. Transfer to a bowl and add the 150g of butter, 400g of sugar, and vanilla. Work the mixture with your hands until it becomes a crumbly, sandy consistency.

  3. Assemble: Divide the dough into two equal parts. Roll each piece out into a rectangle. Brush the surface with the egg white and spread the prepared filling evenly over it. Roll the dough up into a log (roulade).

  4. Bake: Combine the egg yolk, sour cream, and milk to create the egg wash. Brush the top of the rolls with this mixture. Slice the rolls into your desired piece sizes.

  5. Cook: Bake at 180°C for 30–35 minutes until golden brown and crispy.
