Egg yolk: 1
-
Sour cream: 1/2 tsp
-
Milk: 2 tbsp
Instructions

Prepare the Dough: Combine the flour and cold butter (or margarine) in a bowl. Use your fingers or a pastry cutter to rub the butter into the flour until you have a crumbly texture. Dissolve the baking soda into the Matsoni, then add it to the flour-butter mixture. Knead until you get an elastic dough. Wrap it and refrigerate for about 2 hours.
-
Prepare the Filling: In a dry pan, lightly toast the 400g of flour until fragrant and slightly golden. Transfer to a bowl and add the 150g of butter, 400g of sugar, and vanilla. Work the mixture with your hands until it becomes a crumbly, sandy consistency.
-
Assemble: Divide the dough into two equal parts. Roll each piece out into a rectangle. Brush the surface with the egg white and spread the prepared filling evenly over it. Roll the dough up into a log (roulade).
-
Bake: Combine the egg yolk, sour cream, and milk to create the egg wash. Brush the top of the rolls with this mixture. Slice the rolls into your desired piece sizes.
-
Cook: Bake at 180°C for 30–35 minutes until golden brown and crispy.
Enjoy your delicious, crispy Kada!
