How to Make Ostri: The Best Georgian Spicy Beef Stew
Ostri is one of Georgia’s most beloved traditional dishes — a hearty, spicy beef stew bursting with flavor. 3 onions

4 tomatoes

2 bay leaves

2 cloves of garlic

1 tsp ground coriander

1 tbsp hot red pepper

1 tbsp tomato paste

90 g butter

Salt to taste

Fresh parsley for garnish
Preparation Method

Cook the meat:
Cut the beef into cubes, place it in a pot, add the bay leaves, and pour in 180–200 ml of water. Cook over low heat for about 2 hours until tender. Once done, strain and reserve the broth. -
Sauté the onions:
In the same pot with the beef, add butter and salt. Stir in the chopped onions and cook over low heat for a few minutes until soft. -
Add tomatoes:
Add peeled and chopped tomatoes. Stir and simmer for about 5 minutes. -
Add spices:
Mix in the minced garlic, ground coriander, tomato paste, and hot pepper. Stir well to combine. -
Simmer with broth:
Pour in the reserved beef broth, mix thoroughly, and simmer over low heat for a few more minutes. -
Finish and serve:
Finally, add chopped parsley, stir, and cook for another 5 minutes on low heat. Serve hot and enjoy the rich, spicy flavors of traditional Georgian Ostri.
