Chacha is more than just a drink—it’s a liquid monument to Georgian hospitality, a testament to centuries of tradition, and the raw energy of the Caucasian soil. Often referred to as "Georgian Grappa," Chacha possesses a character that is far deeper and more complex.

This potent spirit, typically ranging from 40% to 50% ABV, is crafted from grape pomace (the skins, seeds, and stems) left over from the winemaking process. It captures the primal essence of the vineyard, distilled into a clear, powerful elixir.

A Heritage Measured in Millennia

As the "Cradle of Wine," Georgia has mastered the art of distillation since ancient times. Traditionally, the "Chacha-ba" (the period of distilling) was a sacred family ritual. For generations, it served a dual purpose: the centerpiece of the legendary Georgian Supra (feast) and a traditional folk remedy known for its invigorating and antiseptic properties. Today, Chacha stands as the perfect bridge between ancestral methods and modern craft spirits.

The Craft: From Vine to Vessel

Creating authentic Chacha is an art form that follows a precise, time-honored process:

  • Natural Fermentation: After the grapes are pressed for wine, the remaining pomace undergoes a natural fermentation where sugars transform into alcohol.

  • The Distillation: The mixture is heated in traditional copper stills, known as a Chacha Qazani. High-quality Chacha is usually double-distilled to achieve maximum purity and a smooth, refined finish.

  • Aging & Character: The spirit can be bottled clear to preserve its raw fruit notes or aged in oak barrels, which grants it a sophisticated golden hue and warm notes of vanilla and spice.

The Art of the Sip

Drinking Chacha is a ritual, not a race. To fully unlock its complex bouquet of dried fruits, walnuts, and meadow flowers, it should be served at a room temperature of 18-20°C.

  • As an Aperitif: To awaken the palate and prepare the senses for a meal.

  • As a Digestif: To aid digestion and provide a warm conclusion to a hearty feast.
