Bazhe: Traditional Georgian Walnut Sauce
Bazhe is a classic Georgian sauce made from walnuts, garlic, and aromatic spices. Traditionally, it is served with roasted chicken or ghomi (a type of cornmeal porridge), adding a rich, nutty, and slightly tangy flavor to any dish.

Ingredients:

400 g walnuts

3 cloves garlic

1 tsp ground coriander

1 tsp yellow flower (optional traditional spice)

1 tsp mixed spices

1 tsp ground red pepper

50 ml water

1 tbsp vinegar (optional)

Salt to taste
Instructions:

Grind the walnuts in a food processor or crush them by hand until they release their natural oils. Pour the oil into a separate container and set aside. Add the garlic, vinegar (if using), and spices to the walnuts.

Mix in 50 ml of boiled and cooled water, stirring well until smooth.

If needed, add a little more water to achieve your desired sauce consistency. Finally, drizzle the reserved walnut oil over the top. Serve and enjoy!
Some families still preserve the traditional methods of preparing Bazhe. According to older generations, the authentic flavor comes from soaking the walnuts in a mortar rather than using a food processor. Nowadays, with busy schedules and the demands of modern life, it’s often hard to follow these old customs—but even a simplified Bazhe keeps the essence of this beloved Georgian recipe alive.
