Tklapi is a beloved Georgian tradition — a naturally sweet, sun-dried fruit leather that families have prepared for generations. When made with apples, it becomes wonderfully aromatic and incredibly easy to prepare. No sugar is needed: the fruit’s natural sweetness depends entirely on the apple variety you choose.

Below is a step-by-step guide to help you make perfect homemade apple tklapi every time.


🥣 Ingredients

  • Apples — any amount you prefer

  • Parchment paper

  • Baking tray or flat pan

  • Oven, or a sunny outdoor spot for drying


🍏 How to Make Apple Tklapi

  1. Prepare the apples
    Peel the apples and cut them into medium-sized pieces.
    There is no need to add sugar — the final sweetness will come naturally from the apples themselves.

  2. Cook on low heat
    Place the chopped apples into a pot, cover with a lid, and cook over low heat.
    Once the apples begin to soften and release their juice, stir occasionally to ensure all pieces soften evenly.

  3. Evaporate excess liquid
    When the apples are fully soft, remove the lid and continue cooking for a few more minutes until the excess liquid evaporates and the mixture thickens.

  4. Spread and dry
    Line a baking tray with parchment paper.
    Spread the apple puree in a thin, even layer and dry it in the oven at 100°C (212°F).
    In summer, sunlight is more than enough — simply leave it out to dry naturally.

  5. Finish and store
    Once the tklapi has cooled completely, roll it up or slice it into strips.
    Store in a glass jar or airtight container.
