This refreshing salad, known in Georgia as Kitris da Pomidvris Salata Nigvzit, is a cornerstone of any traditional feast. Unlike a standard vinaigrette, this version uses a rich, garlicky walnut paste that perfectly coats the crisp vegetables.

Ingredients

  • Tomatoes: 2 medium, ripe

  • Cucumbers: 2 small, crisp

  • Onion: 1 small green or red onion, thinly sliced

  • Walnuts: ¼ cup, finely ground

  • Garlic: 1 clove

  • Green Chili: 1 tsp, finely chopped (optional, for heat)

  • Red Wine Vinegar: 1 tbsp

  • Fresh Herbs: A handful of fresh cilantro (coriander) and purple basil

  • Water: approx. ⅓ cup (to reach desired consistency)

  • Salt: To taste

Preparation Steps

1. Prepare the Vegetables

Roughly chop the tomatoes and cucumbers into bite-sized pieces and place them in a large salad bowl.

2. Create the Walnut Dressing

In a food processor (or using a mortar and pestle for a traditional touch), blend the ground walnuts, garlic, fresh cilantro, and salt. Gradually add the red wine vinegar and water while blending until you achieve a smooth, pourable sauce.

3. Combine and Garnish

Drizzle the walnut dressing over the vegetables and toss gently to ensure everything is well-coated. Garnish the salad with the sliced onions and freshly chopped purple basil leaves.
